For the Filling:

  • 225g Nadura* Meat-Free Mince
  • 50g Red Onion, finely chopped
  • 10g Garlic, minced
  • 35g Black Olives, sliced
  • 30g Sun-Dried Tomato, chopped
  • 10g Olive Oil 
  • 5g Fresh Parsley, chopped
  • 2g Dried Oregano 
  • 30g Vegan Mayonnaise
  • Salt 
  • Black pepper 

For the Panini

  • 2 Panini Bread or Ciabatta rolls
  • 20g Arugula or Baby Spinach
  • 30g Roasted Red Pepper (optional)
  • 5g Sunflower/ Avocado oil for grilling

Meat Free Mince

preparation

To cook the mince filling

  1. Heat the oil in a skillet over medium heat.
  2. Add chopped red onion and sauté for 2–3 minutes until soft.
  3. Stir in garlic and cook for another 30 seconds.
  4. Add Nadura* mince and cook, breaking it apart, for 5–6 minutes until browned.
  5. Mix in sun-dried tomatoes, black olives, and oregano. Cook for another 2 minutes.
  6. Remove from heat and transfer to a bowl.
  7. Once slightly cooled, stir in chopped parsley, lemon juice and vegan mayo until the mixture is creamy and evenly coated.
  8. Season with salt and pepper if needed.

To assemble the panini

  1. Slice panini rolls and spoon the mince mixture generously onto the bottom halves.
  2. Layer with roasted red pepper strips and rocket or spinach.
  3. Close the sandwich and gently press.
  4. Heat a grill pan or sandwich press, lightly brush with olive oil.
  5. Grill the paninis for 2–3 minutes per side until golden and heated through.
