Ingredients

  • 400g Nadura* Chicken or Meat-Free Mince, defrosted 
  • 40g Spring Onion, finely chopped
  • 15g Ginger, minced
  • 15g Garlic, minced
  • 10g Avocado/Sunflower Oil 
  • 5g Lemongrass Paste
  • 1g Chili Flakes

 

Dressing & Garnish

  • 50g Shallot, sliced
  • 25g Toasted Sesame Oil
  • 25g Lime Juice
  • 15g Light Soy Sauce
  • 15g Mint Leaves, roughly chopped
  • 15g Coriander Leaves, roughly chopped
  • 2g Sugar

preparation

  1. Heat oil in a pan over medium heat and stir-fry Nadura* Mince for 5 minutes until lightly browned.
  2. Add ginger, garlic, lemongrass paste, and chili flakes. Cook for an additional 3 minutes, then transfer the mixture to a bowl.
  3. In a small bowl, whisk together the toasted sesame oil, lime juice, and soy sauce to make the dressing.
  4. Pour the dressing over the cooked mince. Add mint, coriander, and sliced shallots, and stir until well combined.
  5. Serve with lettuce cups or steamed rice.
