Ingredients

 

Dough

  • 250g All-Purpose Flour
  • 2g Salt
  • 120ml Warm Water

Filling

  • 300g Nadura* Chicken-Free or Meat-Free mince, defrosted
  • 100g Onion, finely chopped
  • 40g White Cabbage, finely chopped
  • 15g Fresh Ginger Root, minced
  • 6g Garlic, minced
  • 20g Light Soy Sauce
  • 15g Sesame Oil
  • 2g Ground Cumin
  • 1g Ground Coriander
  • 1g Ground Black Pepper
  • 10g Fresh Cilantro, chopped
  • 1g Chili Flakes (optional)

For the Dough

  1. In a large bowl, combine the all-purpose flour and salt.
  2. Gradually add the warm water, mixing as you go, to form a dough. If the dough is dry add more water depending on the consistency.
  3. Knead the dough for about 5-7 minutes until smooth and elastic.
  4. Cover the dough with a damp cloth and let it rest for 30 minutes.

For the Filling

  1. Heat sesame oil in a pan over medium heat.
  2. Add the finely chopped onion, ginger and garlic and sauté for 3-4 minutes until translucent.
  3. Add the Nadura* Mince and cook for about 3 minutes.
  4. Stir in the finely chopped cabbage and cook for another 2-3 minutes until softened.
  5. Add the soy sauce, cumin, coriander, black pepper and chili flakes. Mix well.
  6. Remove from heat and stir in the fresh cilantro. Let the filling cool.

To assemble the Dumpling

  1. After the dough has rested, divide it into small portions (about 12-15 pieces) and roll each into a ball.
  2. Roll each ball into a thin circle, about 10 cm in diameter.
  3. Place a spoonful of the filling in the center of each dough circle.
  4. Fold the edges of the dough around the filling, pinching the edges together tightly to seal the dumpling. You can create pleats or a simple fold, as per your preference.
  5. Lightly grease the steamer basket or line it with parchment paper.
  6. Arrange the momos in the steamer, ensuring they don’t touch each other.
  7. Steam the dumpling over boiling water for about 12-14 minutes, or until the dough is soft and fully cooked through.
  8. Serve hot with chili garlic dipping sauce.
