Ingredients

  • 400 grams Nadura* Chicken-Free Mince
  • 125 grams Button Mushrooms, sliced
  • 100 grams White Onion, diced
  • 100 grams Broccoli Florets 
  • 250 ml Coconut Milk 
  • 250 ml Water
  • 25 grams Mild Thai Curry Paste 
  • 10 grams Garlic, finely chopped
  • 10 grams Ginger Root, finely chopped 
  • 5 grams Avocado/Sunflower Oil
  • 2 grams Pandan Leaves
  • 1 gram Turmeric Powder

preparation

  1. Heat oil in a pan over medium heat and sauté the mince for 5 minutes until lightly browned.
  2. Add sliced mushrooms, onion, garlic, and ginger, and continue to sauté for 6 minutes until softened and fragrant.
  3. Stir in the Thai curry paste, turmeric, and pandan leaves, cooking for 2 minutes to allow the aromatics to bloom.
  4. Pour in the coconut milk and water, stirring well. Cover the pan with a lid and let it simmer for 15 minutes.
  5. Add the broccoli florets to the curry and cook for an additional 2 minutes until tender.
  6. Serve hot with steamed rice.
