Ingredients

  • 400 grams Nadura* Meat-Free or Chicken-Free Mince 
  • 300g Dried Udon Noodles or another noodle of choice
  • 10 grams Toasted Sesame Oil
  • 20 grams Soy Sauce 
  • 15 grams Hoisin Sauce
  • 5 grams, 5-Spice Powder
  • 3 grams, Curry Powder
  • 4 pcs Baby Bok Choy, cut in half
  • 30 grams, Spring Onion, sliced
  • 40 grams, Roasted Peanuts

 

Sauce

  • 40 grams Peanut Butter
  • 20 grams Chili Oil
  • 20 grams Garlic, minced
  • 10 grams Ginger, peeled and grated
  • 3 grams Sichuan or Pink Peppercorn, crushed 
  • 375 ml Vegetable Broth 
  • 10 grams Garlic, finely chopped
  • 10 grams Ginger Root, finely chopped 
  • 5 grams Avocado/Sunflower Oil
  • 2 grams Pandan Leaves
  • 1 gram Turmeric Powder

preparation

  1. In a large pot of boiling water, cook the noodles for 5–6 minutes. Drain and set aside.
  2. Heat a wok over medium-high heat, add sesame oil, and fry the mince for 5–6 minutes. Add hoisin sauce, soy sauce, five-spice powder, and curry powder, then cook for 2 minutes. Remove from the pan and set aside.
  3. To make the sauce, heat the wok over medium heat and add the chili oil, soy sauce, peanut butter, Sichuan peppercorns, garlic, and ginger along with the vegetable stock. Stir until combined and cook for 3 minutes.
  4. Blanch the bok choy in boiling water for 1–2 minutes until tender.
  5. Divide the sauce between four bowls, then add the noodles, bok choy, and mince. Garnish with spring onions and peanuts, and serve immediately.
