Ingredients

  • 225g Nadura* Meat-Free or Chicken-Free Mince 
  • 125g Dried Udon Noodles or another noodle of choice
  • 125g Baby Bok Choy, cut in half
  • 40 grams, Spring Onion, sliced
  • 10g Toasted Sesame Oil
  • 5g Fresh Ginger, minced
  • 5g Garlic Clove, minced
  • 2g, 5-Spice Powder

 

Sauce

  • 40g Smooth Peanut or Sesame Butter
  • 25g Light Soy Sauce
  • 20g Chili Oil
  • 15g Chinese Black Vinegar 
  • 7g Brown Sugar or Maple Syrup
  • 100 ml Warm Water

 

Garnish

  • 15g Spring Onion (green part), thinly sliced
  • 20g Roasted Peanuts, roughly chopped

 

preparation

  1. In a large pot of boiling water, cook the noodles for 5–6 minutes. Drain and set aside.
  2. Heat a wok over medium-high heat, add sesame oil,  sauté the spring onion, garlic and ginger for 1–2 minutes until fragrant. Add Nadura mince and 5 spice and cook for 5–7 minutes, stirring to crumble and brown lightly.
  3. Blanch the bok choy in boiling water for 1–2 minutes until tender.
  4. To make the sauce, in a bowl, whisk soy sauce, peanut butter, chili oil, black vinegar, brown sugar, and warm water until smooth.
  5. Toss the noodles in the sauce to coat.
  6. Place noodles in a bowl, then top with the mince and boy choy followed by peanuts and scallions.
