Ingredients

 

  • 225g Nadura* Meat Free Mince
  • 300g Phyllo Pastry
  • 225g Potatoes, peeled and diced
  • 150g White Onion, finely chopped
  • 30g Olive Oil 
  • 20g Plant Based Milk (for brushing)
  • 2g Paprika 
  • 2g Ground Cumin 
  • 1g  Ground Black Pepper 
  • Salt to taste

preparation

  1. Boil potatoes in salted water for 8–10 minutes until just tender. Drain and set aside.
  2. To prepare the filling, heat 10ml olive oil in a pan and sauté chopped onions until soft for about 5 minutes.
  3. Add Nadura* mince and cook for 5–7 minutes. Add spices: paprika, cumin, pepper, and salt to taste.
  4. Stir in boiled potatoes and mix well.
  5. Let the filling cool slightly.

 

To assemble the Borek

  1. Preheat oven to 180°C
  2. Lay 2 sheets of phyllo on a surface. Brush lightly with oil. Add filling along one edge and roll into a log or spiral.
  3. Repeat until all filling and pastry are used.
  4. Place on a baking tray lined with parchment paper.
  5. Brush tops with olive oil or oil + plant milk for a golden crust.
  6. Bake for 30–35 minutes or until golden brown and crispy.
