Ingredients

 

  • 225g Nadura* Meat Free Mince 
  • 200g Cooked White Beans, rinsed and drained
  • 75g Carrot, diced
  • 50g Celery, diced
  • 50g Onion, finely diced
  • 40g Plum Tomato, finely chopped
  • 10ml Olive or Avocado Oil
  • 5g Garlic Clove
  • 1g Dried Oregano
  • 0.5g Dried Rosemary
  • 1 bay leaf
  • Salt & Pepper

  1. Heat oil in a medium pot over medium heat. Add onion, carrot, and celery. Sauté the aromatics for 4–5 minutes until softened and lightly golden.
  2. Stir in garlic, oregano & rosemary. Cook for 30 seconds until fragrant.
  3. Add Nadura* mince and cook 5–7 minutes, breaking it apart with a spoon until lightly browned.
  4. Add white beans, broth, water, bay leaf, salt, and pepper. Stir and bring to a gentle simmer.
  5. Reduce heat and cook uncovered for 15–20 minutes, stirring occasionally, until the stew thickens slightly.
  6. To finish stir in the finely chopped plum tomato during the last 2–3 minutes of cooking for freshness and gentle acidity. Remove bay leaf.
  7. Serve with a side salad, for a protein rich comforting meal.
